Peanut Butter Banana Oatmeal Bread

Peanut Butter Banana Oatmeal Bread

Ingredients
     For the Oatmeal Bake

  • 1/2 cup peanut butter (I used crunchy but you can use creamy too)
  • 2 - 4 tbsp honey
  • 1 cup mashed ripe bananas
  • 2 eggs
  • 1.5 cups milk
  • 2.2 cups quick oats
  • 2 tsp cinnamon
  • 1.5 tsp baking powder
  • .2 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 cup peanut butter chips (I didn't use this because I used the crunchy peanut butter)
     For the Syrup
  • 1/3 cup maple syrup (I used less then 1/4 Cup)
  • 2 tbsp creamy peanut butter
Directions
  1. Preheat oven to 350. Lightly spray an 8x8 (I used 6x11) inch baking dish with non-stick cooking spray.
  2. In a medium bowl, whisk together peanut better, honey, bananas and eggs. Carefully whisk in milk.
  3. In a large bowl, whisk together oats, cinnamon, baking powder, salt and nutmeg. Stir in wet ingredients. Stir in peanut butter chips.
  4. Pour batter into prepared dish. Bake for 20 - 30 minutes or until toothpick inserted in the center comes out mostly clean.
  5. Remove to a wire rack to cool for about 10 minutes
  6. While oatmeal bake is cooling, prepare peanut butter maple syrup by whisking together peanut butter and syrup until combined
  7. Cut oatmeal bake into pieces and drizzle syrup over the top and decorate with fresh cut bananas (optional)
