Peanut Butter Banana Oatmeal Bread
Ingredients
For the Oatmeal Bake
- 1/2 cup peanut butter (I used crunchy but you can use creamy too)
- 2 - 4 tbsp honey
- 1 cup mashed ripe bananas
- 2 eggs
- 1.5 cups milk
- 2.2 cups quick oats
- 2 tsp cinnamon
- 1.5 tsp baking powder
- .2 tsp salt
- 1/4 tsp nutmeg
- 1/4 cup peanut butter chips (I didn't use this because I used the crunchy peanut butter)
For the Syrup
- 1/3 cup maple syrup (I used less then 1/4 Cup)
- 2 tbsp creamy peanut butter
Directions
- Preheat oven to 350. Lightly spray an 8x8 (I used 6x11) inch baking dish with non-stick cooking spray.
- In a medium bowl, whisk together peanut better, honey, bananas and eggs. Carefully whisk in milk.
- In a large bowl, whisk together oats, cinnamon, baking powder, salt and nutmeg. Stir in wet ingredients. Stir in peanut butter chips.
- Pour batter into prepared dish. Bake for 20 - 30 minutes or until toothpick inserted in the center comes out mostly clean.
- Remove to a wire rack to cool for about 10 minutes
- While oatmeal bake is cooling, prepare peanut butter maple syrup by whisking together peanut butter and syrup until combined
- Cut oatmeal bake into pieces and drizzle syrup over the top and decorate with fresh cut bananas (optional)
